Because green aren't round, the center would be defined as the point equidistant from the backmost portion and the frontmost. This is why yardage books will tell you how deep the green is, and the pin placement is usually indicated by the color of the flag, or some placement code displayed at the beginning of the round which goes with a pin sheet. This way if you know that the pin is in the back of the green, you can add the proper yardage to your shot depending on how deep the green is.
